to prepare the cookies first you have to prepare all the necessary, that is:
- 250 g ” 00 ” flour
- 25 g cocoa powder
- 75 g powdered sugar
- chili pepper q. b.
- 1 pinch salt
- 1 egg
- 125 g cold butter in the refrigerator
- half a sachet of baking powder
After you have prepared all the ingredients, you begin also to prepare your biscuits by sifting in a bowl the flour with the cocoa, and then dug a furrow in the central part and add the sifted icing sugar, hot pepper q. b., salt and eggs. Work the ingredients together until to absorb the flour, then add the cold butter cut into small pieces and finally the yeast. Quickly blend the ingredients until you get a dough that is homogenous and smooth. Let it rest in the fridge for half an hour wrapped in cling film and roll it out with l’ help of a rolling pin. Now, with a cup-pasta, cut out the biscuits with the shape that you prefer. Place the biscuits on a baking sheet lined with parchment paper and bake the biscuits for 15 minutes at 180°C. When the cookies are cooked, let them cool before serving and if you want to make them even more pretty, you could decorate them with royal icing or sugar paste.
