to prepare your cake for 8 persons you will need
250 gr of peeled almonds
180 gr icing sugar
1 vanilla bean
100 grams of candied orange candied
2 tablespoons grated orange peel
180 grams of white chocolate
50 gr of potato starch
5 gr of baking powder
5 eggs
60 gr of caster sugar
100 ml extra-virgin olive oil
powdered sugar q. b.
with all l’ s needed, and cook the peels of orange in a small saucepan for 10 minutes together with 2 tablespoons of water and 3 tablespoons of sugar. Then separately beat the eggs with the sugar, to make them foamy. Blend the almonds with the icing sugar and the seeds of the vanilla bean, then in the container with the mixture of almonds, add the white chocolate reduced scale, the peels of the orange and candied, the grated rind of the’ orange and corn starch, sifted with the baking powder. At this point pour l’ oil and eggs and mix well, until dough is smooth. Once prepared the mixture, grease with butter and sprinkle with the potato flour a cake pan of 24 cm. diameter, then, pour l’ dough caprese. Turn on the oven to pre – heat it, then cook the cake on 200° for 10 minutes, then lower the temperature to 160° and continue cooking for about one’ time. When the cake is ready, let it cool down in the mold and not sformatelo before 2 hours. At this point, you can place it on a serving dish, sprinkle with icing sugar and serve.
