How to make the spätzle with nettles
The spätzle, a dish typical of the Trentino Alto-adige, with a base of spinach, but in this case, we propose a version that is very tasty and unusual at the same time. It is in fact a mixture obtained from a mixture of nettles, eggs, flour and water. After obtaining a solution, fluid, passing the mesh of a potato masher to then be cooked in boiling water, as the gnocchi. They lend themselves to any type of sauce, in this case, perhaps, better to prefer a simple seasoning of butter and onion to enhance the taste of the’ stinging nettle. to prepare this recipe for 6 people you will need:
- 3 eggs
- 10 handfuls of leaves of nettles
- 500 g flour
- 200ml milk
- 150 ml sparkling water
- 1 teaspoon nutmeg
- Salt q.b.
After you have prepared the necessary, wear gloves, wash the nettle leaves, dry them and put them in the blender with the eggs. To the mixture is fluid and free of lumps is obtained, add the flour, the milk, the nutmeg and the salt. Finally, pour in the mineral water, mix everything well and let stand for 30 minutes in the fridge the mixture. In the meantime, boil water for cooking. When the water boils, add salt.

When the spatzle are ready, let them stir for a few minutes in the pan with the sauce, add the grated cheese, if you like, serve and serve.
